New Ideas for Dinner Time?

Hey Everyone,

I need some new ideas on what to cook my girls for dinner. They are 5,3, & 15 months. They always have the regular mac & cheese, chicken nuggets, things like that..

Any new ideas of what I can cook for them ?

Fresh berries (buy whatever is in season where you are â or use frozen)
Yogurt
Granola
Beverage Of Choice
Mix Berries, yogurt and granola.

Lunch â B
Stroganoff Stew
Apples
Beverage Of Choice

Stroganoff Stew

1 lb stew beef, browned and cubed

2 cups of water
1 can cream of mushroom soup
1 tsp onion powder
¼ tsp garlic powder
1 tsp worstershire sauce
1 8 oz container sour cream

Cook beef in water until fork tender. Stir in remaining ingredients except for sour cream and warm over medium high heat until bubbly. Stir in sour cream and serve. May add cooked, drained egg noodles to make this recipe stretch for a larger crowd.

Tuesday
Breakfast â C

Grilled Bulls-eye
Juice

Grilled Bulls-eye
For each serving, butter one slice of bread. Cut large circle out of the middle. Place bread in hot skillet or on hot griddle. Place one egg (can be beaten if you prefer scrambled eggs) in center. Cook until egg is set on both sides.

Meatball Subs

Meatball Subs

1 lb ground beef
½ cup bread crumbs
1 egg
1 tsp seasoned salt or herb seasoning mix
1 cup meatless spaghetti sauce
grated mozzarella cheese
hoagie buns

Mix together ground beef, bread crumbs, egg and seasoning. Shape into 1 ½ inch sized balls. Brown in skillet over medium heat. Add in spaghetti sauce and heat thoroughly. Spoon meatballs and sauce onto split rolls, sprinkle with cheese and serve.

Wednesday

Maple Oatmeal
Milk

Maple Oatmeal
Cook oatmeal according to package directions except substituting milk for ¼ of the water. During final minutes of cooking, stir in 1 tbsp of maple syrup per serving. Serve while hot.

Lunch â F
Meat and Cheese Pita-Wiches

Beverage Of Choice

Open pita pockets and fill with your favorite meat and cheese sandwich fillings. Try to cook extra meat the night or two before and save for this lunch so you can have something fresh for these sandwiches. Add your favorite grated cheese, veggies and sandwich spread.

Beverage Of Choice

Western Scramble

2 tablespoons butter
6 large eggs
1/4 cup finely chopped green bell pepper
1/3 cup finely chopped onion
3/4 cup milk
3/4 cup chopped cooked ham
3/4 teaspoon salt
dash pepper

In skillet melt butter. Beat eggs and whisk in remaining ingredients. Pour mixture into hot skillet. Cook, stirring to cook evenly.

Lunch â H
Chili Potatoes
Beverage Of Choice

Chili Potatoes
1 baked potato for each serving
Cooked chili (see week four for recipe - Wednesday)
Grated cheddar cheese
Sour cream

Split open potatoes. Spoon chili into potato cavity. Sprinkle with cheese and top with dollop of sour cream.

Banana Muffins
2 cups self-rising flour
2-3 over-ripe bananas, mashed
2 eggs
¾ cup sugar (may reduce if too sweet for your tastes)
½ cup chopped walnuts or pecans (optional)

Using recipe from week three, prepare banana muffin batter. Pour into greased and floured or paper lined muffin tin. Bake 350 degrees for 20-25 minutes or until an inserted toothpick comes out clean.

Teryaki Wings
10-15 chicken wings or drumettes
½ cup soy sauce
¼ cup brown sugar
1 tbsp oil

Preheat oven to 425° F. Toss wings in large plastic bag with soy sauce, brown sugar and oil until coated. Spread evenly on baking sheet and bake until juices run clear.

Ok, so I love cooking and I cook a lot. I am now pregnant and I am working full time about an hour away from home in Los Angeles traffic so I am REALLY tired when I get home. Most of the things I cook are really time consuming. I go to different stores to get the best ingredients and I cook a big meal that is really great. I just really need some ideas for healthy meals that will give left overs so my hubby and I can take them to work for luch the next day! mmm... getting hungry already! (I do plan on giving 10points!!!) Oh, and I really like everything! All meat, fish, chicken, whatever! As long as its not lunch meat, hot dogs, canned or frozen...

Congrats on you pregnancy.

I have two suggestions for easy prep meals that serve as lunch, dinner following days. A little FYI...I am a self admitted food snob. I love food and will only eat well prepared food. It doesn't have to be expensive...just good. No canned soup. Sorry folks. I haven't tasted any recipe with a can that I have enjoyed.

Pulled Pork
I made this in the crockpot this morning before work...

Put the crock on either the low or medium setting and place it on a baking dish (in case of boil over). Throw in 1 onion sliced, 6 T brown sugar, 1/2 C vinegar, S and P and your favorite 15, 16 oz. BBQ sauce. Stir it up. Add either a pork butt or a pork shoulder. Submerge meat in sauce. and cover. Do not take the cover off until it's time to serve. It needs a good 7-9 hours. When it's done, shred with two forks and put back in sauce. Serve with either egg noodles or rolls.

ALSO: This freezes really well. Once cooled, I throw it in a zip lock bag and lay flat in the freezer.

TIP: prep everything the night before and throw it in the crock pot. Pull crock out in the morning and stick it in the heating unit (the part of the crock that plugs in). Save that precious time in the morning. PLUS, you don't want to be smelling onions at 6am.

Dinner two: Salmon Filet

This is the best salmon I have ever had anywhere. Its super easy. Grab any seafood spice mix that you enjoy and add brown sugar to taste. Put a thick layer of spice on the salmon leaving skin on the one side intact. Heat up a frying pan and throw in about 2T canola or veg oil. Add the fish, skin side up. Cover (timing depends on the thickness). Use two spatulas and gently flip. In a small microwave safe bowl, add 6T orange marmalade (I use sugar free for dieting needs) and 3 T orange juice. Use microwave to heat up. When the salmon has about 3 minutes left pour the marmalade over the fish. Slap it on a plate and serve with rice and some green beans. AMAZING!

I make extra and save it for lunch the next day (or two). I put in on top of a salad with either balsamic dressing or red raspberry dressing. Sooooo good.
