My doctor adviced me to have a diet and have some lettuce as a dinner what are some healthy and good tastng recipe for lettuce and affordable?

*Stir-fried Lettuce
1 head iceburg lettuce
2 teaspoons soy sauce
1 1/2 teaspoons Chinese rice wine or dry sherry
3/4 teaspoon granulated sugar
1 1/2 tablespoons vegetable or peanut oil
2 garlic cloves, peeled and minced
1 1/2 teaspoons minced ginger
1/8 â 1/4 teaspoon red pepper flakes
1/2 teaspoon salt
1/2 teaspoon Asian sesame oil (such as Kadoya)
Wash the lettuce, drain and separate the leaves. Itâs important to make sure the lettuce is dry). Cut across the leaves into pieces about 1 inch wide.
Combine the rice wine or dry sherry, soy sauce, and sugar in a small bowl, stirring. Set aside.
Heat a wok on medium-high heat and add oil. When the oil is hot, add the garlic, ginger and red pepper flakes. Stir-fry until aromatic (5 - 10 seconds) and add the lettuce. Stir-fry the lettuce, sprinkling with the salt, for 1 - 2 minutes, until the leaves begin to wilt.
Give the sauce a quick re-stir and swirl it into the wok. Stir-fry for 1 - 2 more minutes, until the lettuce turns dark green. Remove from the heat and stir in the sesame oil. Serve immediately.

Does anyone know the recipe for the Leek with sauce that you get on a carvery sometimes?

I can't think what the sauce is. If you know I would really appreciate it, my husband was going on about it last night and I wanted to suprise him with it on our dinner today. :)

Leek in Cream Sauce as a side dish to fish or poultry
6 stalks leeks
2 stripes of lemon rind
60 g butter
2 tbsp flour
3 tbsp cream
80 g breadcrumbs
2 bay leaves
some nutmeg, freshly grated
some ground pepper
some cooking twine
Method
Preheat the to 200°C.
Wash the leeks thoroughly to remove sand or soil. Cut each stalk into 4 equal size pieces, cut each piece lengthways twice. Tie into bunches.
Place the leeks in a pot with boiling water, add the lemon rind and bayleaves. Cook for 15-20 minutes. Drain off but reserve the cooking liquids.
Make a roux, using 30g of the butter,melt this in a saucepan, add flour and cook for 1 minute (a roux can be used to thicken any sauce).
Pour about 375-400ml of the cooking liquid into the roux stirring al the time. Season the sauce with pepper and nutmeg.
Place the leeks in a oven-proof dish and cover with the sauce.Melt the remaining butter in a small saucepan until it starts to bubble up, add the breadcrumbs and brown all over.
Sprinkle the crumb/butter mixture over the dish. Place in the oven and bake for 15 minutes. Remove the twine and serve immediately.
Note: If leek is not available then this dish also tastes good using spring onions. If margarine is used instead of butter then this dish would be suitable for vegan diets Serves 4

60 g cheese, grated
White Sauce:
300 ml milk
30 g butter
30 g plain flour
1 tsp mustard
1 clove(s) garlic, crushed
1 pinch(es) nutmeg, ground
Method
Cut leeks into small pieces and steam or boil leeks until tender, 7-9 minutes.
Put all ingredients for the white sauce in a pan and heat gently, stirring occasionally until sauce thickens for approximately 10 minutes. Liquidize in a blender.
Place in an oven proof dish and pour over white sauce to cover the leeks.
Bake in an oven for approximately 20-30 minutes. Sprinkle with cheese during the last 5 minutes of baking. Serves 4

4. As your leeks are simmering, put the milk, flour, butter, and bay leaf in a saucepan, and mix well.
5. Bring to the boil, whisking continuously; simmer for 2 to 3 minutes, until the mixture thickens.
6. Add garlic powder, salt, mustard powder and nutmeg, then 3/4 of the grated cheese, whisking until it is completely melted.
7. Remove the bayleaf, then pour the cheese sauce over the leeks.
8. Top with remaining cheddar, and bake 20-30 minutes, until golden.
9. If possible, let stand 5-10 minutes before serving to allow the cheese sauce to further"set" and to avoid burning your mouth.Servings:4
