How do you handle it when your boss screws stuff up?

So I am cook in a large banquet kitchen on the cold side. Today I went in to work and it should have been a totally slow day. I spent the first 2 hours of the day cleaning out the big cooler which i like to do. It was a mess. So as the day progresses one of the stewards for the hotel tells me I am missing a menu for lunch. I went over to the hot side(there are usually 2 sets of menus one for the cold and one for the hot side) and looked at the lunch I was missing it was nothing just a grilled veg platter for like 40 people. Then one of the cooks comes over to me and asks me if I have the special meals for an indian party we had in the house and of course I did not. And then when I was looking at the menu on the hot side I checked out the menus for the dinner tonight as on my menu there was nothing. I found a huge party of 300 people for crudite(raw veg), 400 canapes or cold horsdouvres(I know it is spelled wrong) and 10 baked bries(brie cheese wrapped in puff pastry). I was FREAKING OUT about it. It was only me and I had to make all of this food. I was so mad and then I checked the hot side menu for tomorrow and we are missing a boxed lunch for 30 people. My boss lost his son from a heart attack around 6 months ago and I know it is always his mind. He was only like 35 years old. I know when I lost my mom I was not totally there either but life goes on. Eventually you just have to get over even though it sucks. Any help thanks
I think he is on his late 50's and wonder if he is getting a little senile.

Instead of waiting for the "hot side" to tell you what you need to do, why don't you do what you did today = look for yourself what is needed.

It doesn't seem like the manager should be responsible for telling you. You clearly seem capable of checking on your own.

Im working on a Christmas dinner menu and looking for some suggestions on side dish favorites out there.

I would make an au jus from the roast and serve garlic mashed potatoes and green beans with mushrooms. I think the flavors all compliment, but don't take away from the prime rib.


Creamy Garlic Mashed Potatoes
ngredients

3 1/2 pounds russet potatoes
2 tablespoons kosher salt
16 fluid ounces (2 cups) half-and-half
6 cloves garlic, crushed
6 ounces grated Parmesan

Directions

Peel and dice potatoes, making sure all are relatively the same size. Place in a large saucepan, add the salt, and cover with water. Bring to a boil over medium-high heat and then reduce heat to maintain a rolling boil. Cook until potatoes fall apart when poked with a fork.

Heat the half-and-half and the garlic in a medium saucepan over medium heat until simmering. Remove from heat and set aside.

Remove the potatoes from the heat and drain off the water. Mash and add the garlic-cream mixture and Parmesan; stir to combine. Let stand for 5 minutes so that mixture thickens and then serve.

Green Beans with Mushrooms and Shallots
Ingredients

1 pound fresh green beans, trimmed and cut into 1 inch pieces
1 tablespoon water
2 tablespoons olive oil
1/3 cup sliced shallots (about 2 medium)
3/4 pound assorted fresh mushrooms, (ie: button, baby bella, shiitake, oyster, chanterelle), sliced
Salt and freshly ground black pepper

Directions

Put green beans in a microwave-safe bowl with the water. Cover tightly and microwave on high for 4 minutes. Carefully remove the cover, drain in a colander, shaking off any excess water, and set aside.

While the beans are cooking, heat the oil over medium-high heat in a large nonstick skillet. Add the shallots and cook, stirring, until softened slightly, about 2 minutes. Add the mushrooms and cook, stirring occasionally, until the water they release has evaporated and they begin to brown, about 10 minutes. Add the green beans and stir to combine and rewarm. Season with salt and pepper and serve.
