What to cook my boyfriend for dinner?

I want to cook a special dinner for my boyfriend but he is on a diet so I don't know what to cook. I don't know all the rules of his diet but I think it's no carbs, no starches or sugars. It's geared towards a more rapid weight loss then regular dieting. I think all he is eating is meats, cheese and vegetables. I'm looking for any suggestions and recipes if you have them. Thank you. P.S. I'm not the worlds best cook so the more simple the better.

Here is one of my favorite menus to prepare for special occasions

Seared rib eye with creamed spinach

Ingredients

For the rib eyes:
2 rib eye steaks, preferably bone-in
Kosher salt
Black peppercorns in a pepper mill
Vegetable oil

For the creamed spinach
9 to 10 ounce package frozen chopped spinach
4 ounces vegetable cream cheese
2 teaspoons garlic salt
1/4 cup grated Parmesan cheese, divided

Method

For the rib eyes:
Take the steaks out of the refrigerator and season both sides well with kosher salt. Let them come to room temperature, at least 40 minutes, preferably up to an hour

Heat oven to 375

Heat an oven proof skillet over high heat for 2 minutes. Add 1 tablespoon of canola, safflower, grapeseed or peanut oil and heat for 1 minute.

Add the steaks and set a timer for 4 minutes. Turn the steaks over and set a timer for 3 minutes.

Move the skillet with the steaks to the hot oven and roast 5 minutes for rare, 7 minutes for medium rare and 9 minutes for medium

Use a pot holder to remove the skillet from the oven. Remove the steaks to a clean plate and top with a pat of butter or some crumbled blue cheese. Tent loosely with foil for 4 minutes before slicing and serving. Pass the pepper mill at the table.

For the creamed spinach:
Cook the spinach in the microwave according to the package directions. Strain most of the liquid out. Move the spinach to a saucepan and place over medium heat. Add the cream cheese and heat until melted. Add the garlic salt and stir to combine. Portion the spinach onto dinner plates and sprinkle with Parmesan cheese

What are some popular Fiesta dishes color combinations?

I just got cobalt blue, red, shamrock green and yellow. I'm unsure of my selection. Is there anyone out there with Fiesta dishes in multiple colors that can comment on this particular combination??? Also, what color combinations do you have?

They sound perfect! Did you get sets in each color? If so, I'd set the table for 4 by putting out the dinner plates first, then taking the next piece, and moving clockwise around the table with the color change.

Personally, I would get 4 sets of one color--like the red--then add
4 sets in different colors. I'd add turquoise myself to the other colors you already own. Then I could set the table with just one color, or I could mix it up, and still have a lot of my chosen color, so it doesn't look too mixed and matched. Just my 2 cents.

I happen to own plain white dishes that I dearly love, and I have
added seasonal salad plates with them for different occasions. It works for me, but the Fiestaware is gorgeous! Next time I might go that route.
