I need to know how to make whipped cream from ingridients i have already but I dont have any cream, powdered sugar, or eggs. Is there any way to make homemade whipped cream without any of these ingredients?
Answer
There is an ingredient based recipe search engine called www.supercook.com. I have an account, so I do not have to retype my available ingredients every time I log on. It lists my ingredients in a "pantry." I can highlight any number to find out what recipes I can make with my ingredients while emphasizing what I'm insisting I cook tonight (like that chicken that's only good for two more days). It finds recipes from all over the internet for you, which is handy. Also, after you enter all your ingredients into your "pantry" it will give you grocery list ideas for ingredients that will maximize the number of recipes you can cook.
I just typed in that in my kitchen I have only ground beef, onion, potato, carrot, condensed tomato soup, celery, fresh tomato, beef stock, vegetable oil, and cabbage. It found me 2000 recipes that contain some of my ingredients. However, I only have all the ingredients for 23 entree recipes. I can cook one of these recipes. (I mainly only have enough to make stews, hashes, or shepherd's pie). I can look through to see if any the recipes look "special." I can look through the recipes where I am missing some ingredients, see if any look "special," and tailor my upcoming grocery list with this in mind. Or I could look at the grocery list it suggests for me: rice, white beans, bell pepper, butter, cheddar cheese, onion soup, bay leaf, green beans, pasta, garlic, bacon, chicken stock, peas, parsley, corn. Pretend I buy all these things. (I just typed them in.) It now says I can make 212 entrees. I can make 528 recipes overall (these include side dishes, appetizers, and desserts... though I doubt any desserts can be made with the ingredients I've typed in). I've inventoried our kitchen. I can make 2,000 recipes, which is the most it will return. Because of this, for our household of four, my grocery bill averages only $10 a week.
Disclaimer: My grocery budget gets wrecked whenever my husband shops. Every two weeks or so he makes dinner (which is lovely). He goes out and shops for the one meal. He goes to Costco for it. (I think he goes there because he likes to eat all the samples, sit in their chairs, and scrutinize their very thin television sets). He spends $50 to $80 on these excursions. For one meal. Then I try to figure out how to use that many onions and potatoes before they spoil. He made salmon patties a year ago. I'm still trying to use up the bucket of breadcrumbs he bought that day. This means our collective average monthly grocery shopping cost is $150 to $250.

What is a good dish to prepare for a candle light dinner?

I have a new girlfriend who has never had a candle light dinner. I want to give her one but was thinking what could I prepare. I need a dish that isn't too difficult yet above hamburgers and hotdogs if you know what I mean.
Answer
This is a really good chicken dish. Serve it with asparagus risotto and you're good to go!
Dijon-Tarragon Cream Chicken
1 tablespoon butter
1 tablespoon olive oil
4 skinless, boneless chicken breast halves
salt and pepper to taste
1 1/2 cup heavy cream
3 tablespoon Dijon mustard
2 tablespoons chopped fresh tarragon
1 cup sliced mushrooms
½ onion, chopped
2 cloves of garlic, minced
1 tablespoon white wine
Melt the butter and heat the oil in a skillet over medium-high heat. Season chicken with salt and pepper and coat the chicken with lightly seasoned flour prior to browning them, and place in the skillet. Brown on both sides. Reduce heat to medium, cover, and continue cooking 15 minutes, or until chicken juices run clear. Set aside and keep warm.
Saute garlic, onion, and sliced mushrooms until the onion is soft and the mushrooms are mostly cooked. Splash about 1 tablespoon cup of white wine in the pan to deglaze. Then I added the cream, mustard and tarragon with the garlic, onions, and mushrooms. Cook and stir 5 minutes, or until thickened. Return chicken to skillet to coat with sauce. Drizzle chicken with remaining sauce to serve.
Asparagus Risotto
1 pound asparagus, trimmed and cut into 2-inch pieces
7 1/2 cups chicken broth
1/2 cup finely chopped onion
1/4 cup olive oil
3 cups uncooked Arborio rice
1 cup dry white wine
1 tablespoon butter
1/4 cup grated Parmesan cheese
salt and pepper to taste
Place asparagus in a large saucepan; add 1/2 in. of water. Bring to a boil. Reduce heat; cover and simmer for 3 minutes or until crisp-tender. Drain and set aside.
In a large saucepan, bring broth to a boil. Reduce heat; cover and maintain at a simmer. In a large heavy skillet, cook onion in oil over medium heat until tender. Add rice and stir to coat well; cook 3 minutes longer. Add wine and cook until absorbed.
Stir in 1 cup simmering broth. Cook until broth is almost completely absorbed, stirring frequently, then add another cup of simmering broth. Repeat until only about 1/4 cup of broth remains (discard remaining broth); the process should take about 20 minutes. Rice should be slightly firm in center and look creamy.
Add asparagus; heat through. Remove from the heat; add the butter, Parmesan cheese, salt and pepper. Serve immediately.
